Lehi Mills is a brand that I had never seen before. I found it on the shelf at my local WalMart and got really excited to have a new brand to discover. Looking into the companies website I couldn’t find exactly when they starting making baking mixes but in 2019 the company announced they were launching their products nationally with a new look so it has likely just made it’s way to me and my local stores. They started as a flour company and on the baking mix box they make multiple claims such as “made with hand-selected wheat”. Their company description was interesting as well, it states “Lehi Mills creates small-batch, premium baking mixes with the finest ingredients. Each baking mix starts with our highest quality flour.” This text took up a third of design on the back and another third was taken up by a section titled “Harvest to home” where they briefly show their process and their priorities.
I picked up their raspberry Muffin mix and the actual information on how to bake this mix is so small on the back of the box I actually had to look twice to find it. It’s so different from other mixes I have seen that I had to include a photo on here for you to get an idea. It is definitely cute packaging that grabs your attention and if you are someone who buys just based on the packaging, you’ll definitely be picking this up. With that said, let’s see how the muffin flavor and quality holds up to the packaging.
It’s a standard mix that requires water, oil, and eggs. You mix it all up and pour it into muffin cups. They don’t specify how many muffins it makes but the servings suggest that there are 12 servings of 1 muffin implying this mix makes 12 muffins. Using a 3 tablespoon sized scoop I ended up getting 16 muffins out of the batter which was a pleasant surprise. The batter was actually really tasty and reminded me a lot of Sticky Fingers’ Raspberry scones but was of course sweeter. The dehydrated raspberries were crunchy which was enjoyable in the batter and they gave it good flavor.
I put the muffins in the oven to bake and the recipe claims it takes 18-22 minutes. At 15 minutes I checked and the muffins were done. Some even had overly browned bottoms so I would check it at 14 minutes next time. Of course they lose a small point for this but it seems every box mix company is in kahoots about writing incorrect cook times. I have a theory that they test their cook times on commercial ovens and not the standard that is in every home. Regardless, at 15 minutes, the tops of the muffins had set nicely and the raspberries had re-hydrated. Some of the raspberry bits on the edges started to melted out of the muffins and became very sticky and was almost like a raspberry jam now.
These muffins were amazing. They were just so soft, fluffy, and moist. They had really good flavor. The browned bottoms were more cooked but did not ruin the flavor. The mild tartness of the raspberry flavor and the sweetness of the muffin were so complimentary. They really didn’t have that store-bought muffin flavor that you expect. You could have told me these were homemade and I would believe you. Lehi Mills created a quick and easy box mix for raspberry muffins and it is absolutely better than making it homemade. I will absolutely pick these up again in the future, maybe even in a different flavor. They have blueberry, lemon, and raspberry muffins as well as a carrot cake muffin. I cannot wait to try their other baking mixes for cookies, brownies, and more.
For the prepared mixture, the total calories is 2660. For my 16 muffins that breaks down to 166 calories a piece. If you were to divide it into 12 muffins like the box suggests they would be 221 calories each.

They look delicious but at more than three times the price of Jiffy mix (6 muffin mix) do they seem to be a good value to you?
They definitely seem higher quality and worth the bigger price point!
