Browsing Amazon box mixes, I came across Bob’s Red Mill fudgey brownie mix but it was one of those grocery items that was overpriced for one reason or another. I put it in my cart to remember it later and promptly forgot about it. One day I logged into Amazon and they notified me it had gone on sale and it was now within a reasonable price range so I bought it immediately. I was too excited for a new brownie mix and started baking it the second it arrived at my house. About two weeks later, my local Raley’s started carrying Bob’s Red Mill fudgey brownie mix. After having it sit in my digital cart for months until it went on sale. Sometimes you just have to laugh at the timing of everything.

On the package of this brownie mix, the company talks about prioritizing homemade taste. The first sentence they write is “We all love brownies baked from scratch, but not everyone has the time.” They go on to explain how they use premium ingredients that create a fool-proof scratch-quality brownie. That is what this blog is all about, quality shortcuts. I stand behind this message full heartedly. I always expect box mixes to be full of preservatives but when I went through the ingredients on this box, I knew every one of them. Powdered sugar, flour blend, sugar, cocoa, cocoa powder, sea salt, and baking powder. This is exactly what a box mix should be, a blend of the dry ingredients needed for a recipe, and all you have to add is the wet perishable ingredients.

This mix calls for 2 eggs, melted butter or oil, and water. I went with melted butter since they listed it first. I think butter is superior in brownies but most box mixes call for oil so Bob’s Red Mill is already on the right track in my mind. The batter mixed together nice and quick and it was absolutely decadent, honestly I would eat this by the spoonful but could only handle a few bites. I want this deep rich chocolate flavor in every brownie I eat. The butter made a world of a difference as well as the cocoa powder they use to create the chocolate flavor. I am so excited to eat these brownies.

I poured the batter into the 8×8 square pan and it seemed a little shallow but hopefully this means it will rise a bit. They went into the oven at 325 and the box calls for 30-35 minutes for a metal pan. I checked on it a few times and found at 35 minutes the brownies were ready to come out. I love accurate bake times so much, I’m ready to buy everything Bob’s Red Mill sells. The brownies came out smelling phenomenal and had a beautiful crackle on top. If you buy brownies based off of looks, you’d pick this one. Once they cooled a bit I cut the pan into 16 brownies. This box claims to make “16 two-inch brownies” so this is perfect. So far this company is meeting every standard I have.

Each brownie has a crispy top and bottom with a soft fudgey middle. They had an amazing texture and great flavor. The butter made a huge difference. I’m not sure what it was, but I could still tell these were box mix brownies. Don’t get me wrong, this is as close to homemade as you can get from any box mix and I recommend buying this box mix over any other at this point. I think I have eaten so many brownies for this blog that I can differentiate box mix and homemade but that is a niche experience. I begrudgingly decided I couldn’t eat the whole pan and took these brownies into my workplace to share and they were gone in under an hour. If you’re looking for a great box mix brownie with real ingredients you can pronounce at a decent price, you should pick up this fudgey brownie mix from Bob’s Red Mill.
