Today is an exciting day. I have been wanting to try out Lehi Mills pumpkin chocolate chip cookies for so long now. It’s one of my absolute fall favorites and I knew that this product existed because I have been so close to buying it on many occasions. They sell this box mix on their website year round but every time I have checked, the cost of shipping is so high that I empty my cart and leave. When I found this box mix on display in my local Raleys I was practically jumping for joy and started baking them almost right away.

Now let’s get into the annoying detail. When I got this box ready to bake I found that the recipe calls for pumpkin puree. This is not something I have seen before and didn’t expect. I had to go to the store and get pumpkin because it’s not something I keep on hand like oil, water, and eggs which are typical box mix ingredients. While this was frustrating I have to say that pumpkin puree in desserts makes them significantly more moist and it will definitely have a pumpkin flavor.

Annoyingly, this mix calls for 8oz of pumpkin puree and the smallest can sold is 15oz so now I have a half a can I need to find a use for. Aside from the pumpkin puree, this box mix also calls for oil. The powdered mix smelled like spice cake. I added the oil, pumpkin, and mix together and it came together into a nice soft dough that was very moist from the pumpkin and tasted really really good. I’m starting to think real pumpkin is the secret to a good pumpkin cookie, box mix or no box mix.

The instructions on this box are very vague. It says “drop (the dough) by the spoonful onto a greased cookie sheet” and does not provide a size for the cookie dough and then says bake 15-18 minutes. Bake times are dependent on size so I’m not feeling great about this already. I went ahead and used a single tablespoon sized scoop since that is an average cookie size and scooped out 34 cookies. I’m excited because most cookie box mixes make 12 cookies and if you’re lucky 24 but this one came through and gave about 3 dozen. If I’m being honest, I ate enough dough to make up 2 cookies so you could easily get 3 dozen from this mix in this size of cookie.

I put the pan of 12 cookies into the oven for 10 minutes because I have trust issues. At 12 minutes they were baked. I don’t love that the bake time was wrong and the cookie size was vague. They could do better here for sure. The cookies didn’t spread much and were sort of small but they looked almost exactly like the image on the packaging.

The outside of the cookie had a bit of a crisp to it with the inside being super soft and pumpkiny. The spices they used were perfect and it had the right amount of chocolate chips. This was a really good pumpkin chocolate chip cookie and I highly recommend grabbing a box of these if you find them in stores. I found them at a Raleys for $4.99 and for the amount of cookies I got from the mix, it’s decently priced.
