Scones are one of those pastries I don’t typically go for. I am more of a moist dessert person and while drier pastries definitely have their moments, I’d rather pick something else over a scone. They aren’t easy pastries to make and require you follow some specific steps carefully to get the product correct so imagine my surprise to find this mix that you only need to add water to and then bake. It absolutely sounded too good to be true so I had to give it a try.
The mix smelled really good and looked like it included dried bits of raspberries. The package tells you to add water and mix with a fork. I started with a fork but it was getting sticky at the end so I switched to a rubber spatula and it broke almost immediately. When they say use a fork, don’t ignore it! I ended up using my hands to finish it up and then used a cookie scoop to scoop it onto the pan. My scoop was a tablespoon and I did heaping scoops as the package called for but still ended up with dough leftover.
I divided the remaining dough onto my scones. The package said the mix made 10-12 scones but I felt like I could have easily gotten 14+ but I didn’t want to bake a second sheet so I settled on 12 scones. The package said the triangle shape was optional but I felt it was iconic so I formed my balls into rough triangles. I did this by hand but later figured out the easiest way to make triangles is to have all the dough formed into a circle into a circle and then cut it into wedges similar to how you cut a birthday cake. That hack should make your life easier and the scones more identically shaped.
The packaging did give many optional steps and I feel like this could be really easy and quick if you don’t do any of them but I wanted to make sure these raspberry scones came to their full potential. I chose to make the glaze that the package suggested by mixing powdered sugar, water, and vanilla. This was super runny so I actually added more powdered sugar for a better consistency. It was okay tasting, it really just tasted like the artificial vanilla extract I put in it and I didn’t love it.
I pulled the scones out of the oven after 14 minutes and was saddened to see that my efforts to make them into triangles had been wasted. They grew in every direction and basically just looked like lump shapes. They were golden on the top and smelled fantastic. Once they cooled I drizzled the glaze on top of them. I took a bite without the glaze and it was fantastic. This scone was not dry or crumbly at all, it was just delicious. The raspberry flavor was nice and gave it something extra. I tried the scone with the glaze and it was really good. The added sweetness really brought out the flavors of the scone but did still have that artificial vanilla flavor that I didn’t love. I shared these scones and a recommendation I heard was to add a raspberry extract into the glaze in place of vanilla and I think that would elevate this scone to the next level. Maybe even a raspberry puree would be a good addition to the glaze if you omit the water and vanilla.
These scones are amazing and super simple. I can picture myself buying these again in the future. This was such a good fake that I won’t be making a scone recipe from scratch anytime soon. I only saw a Raspberry flavor at my local Raley’s but I looked it up and they have so many different flavors as well such as blueberry, lemon poppy seed, tart cherry, chocolate chip, apricot, strawberry, salted caramel, cinnamon chip, cheddar & chive, and parmesan garlic & herb. They even have some gluten free scone flavors. I know I will personally be giving these other flavors a try if I see them in store.
This mix as prepared is 1800 calories and 48 grams of protein. If made into 12 scones it is 150 calories each and 4 grams of protein. This does not include the glaze.

These sound and look delicious. I will be tracking down the Tart Cherry and Cinammon Chocolate flavors and hopefully enjoying them with my morning coffee. Thanks for the advice on subbing out the vanilla as well.
You can’t go wrong with cinnamon chocolate! You could definitely add some cinnamon or cocoa into the glaze to bring out those flavors even more.
