Trying the new Girl Scouts Lemon-Ups Blondie kit by Miss Jones

In case you missed the last post, Miss Jones has come out with a line of blondie box mixes inspired by Girl Scout cookies. There are three flavors inspired by thin mints, lemonades, and caramel delights (or samoas). I really enjoyed the last mix we tried, the caramel delights, so I am already excited to try this one. While I don’t typically buy Lemonades when I buy cookies, I have always enjoyed them when I have eaten them. The crunchy lemony cookie with a layer of icing on the bottom, I can understand why it was inspiration for this box mix line. Now let’s see what Miss Jones created with this cookie in mind.

Starting this mix off, you need melted butter, water, and an egg. It was super easy to mix together and it was almost a thick brownie batter consistency. This batter had a good lemony flavor that I really enjoyed. I put the batter into an 8×8 square pan and put it in the oven to bake at 350 degrees. The box claims this will take 24 to 27 minutes to bake but you know we never trust a bake time around here so naturally I set a timer for 20 minutes and kept checking on it. At 24 minutes it was done, a perfect bake time! Miss Jones has already impressed me with their concept and now their bake time. If this dessert is good, I will definitely be a repeat customer for this brand.

Now here’s the problem, my patience. The box recipe wants me to let this pan of blondie’s cool for half an hour, then remove it from the pan, and cool for another hour. Then frost it. Unfortunately I’m not willing to wait. I waited for the Blondie’s to stiffen in the pan a bit and then removed the parchment from the pan to cool some more. I will say that as they cooled, they became stiffer so it makes sense why the recipe called for a cool time but I was too excited to dig in to wait the whole time.

After waiting however long for the pan of blondies to cool, I moved on to icing it. The box comes with premade icing in a squeezable bag. I squeezed it onto the blondies and then spread it around with a spatula. It was a good amount of coverage and stayed in its place. Finally, the box recipe calls for letting the icing sit for an hour while the icing sets up. Again, this isn’t for me. I accept that any soft frosting or ugly visuals are completely on me.

I cut the pan into 16 pieces and gave it a try. Texturally this dessert is phenomenal and I absolutely loved the lemon flavor. I had never considered the possibilty of a lemon blondie and I was missing out. The icing was sweet and tart and the perfect topper. I’m not sure this resembles the crunchy lemonade cookie but it is lemony and does have icing so I guess that’s something. Miss Jones did a great job with this product and I am so glad I gave it a try. I do have to say that despite my impatience, the icing never set up. I placed the extra blondies in a box to share with my coworkers and the very next day, probably 12 hours later, it was still wet and sticky so I don’t love that for presentation, but texturally I liked the more wet frosting. If you like lemon flavored desserts, you definitely need to check this box mix out.
