If you haven’t heard about this new baking mix line by now, you’ve got some blog posts to catch up on. Miss Jones created a line of blondie box mixes inspired by Girl Scouts cookies. These mixes are themed after lemonades, caramel delights (samoas), and thin mints. We’ve tried two of the three so far and now today, we are jumping into the thin mint brownie kit! I know, I know, not technically a blondie but brownies are better than blondie’s and that’s a hill I’ll die on.

Like the others, this mix is simple and easy to mix up. You’ll need oil, water, and an egg to make this batter. It came out much thicker than I expected for a brownie batter and it was gritty. It also was not mint flavored like I had expected. This was honestly not a great brownie batter but at the end of the day, you’re not supposed to be eating just the batter so I can’t judge it too hard.

Using an 8×8 pan, I put the batter into the oven to bake and believe it or not, it was baked in the exact amount of time the packaging calls for. Miss Jones has hit 3/3 in this box mix line for accurate bake times. I have never been happier with a brand. Once baked, you’re supposed to let the pan cool down, then remove the brownies in the parchment paper and let them finish cooling. Unfortunately, for the third time, my patience was lacking. I let it cool for a bit and then accepted any user errors.


The box mix comes with a frosting package that you need to knead until it is soft, and then cut off the corner to pipe onto the sheet of brownies. This went poorly for me so I had to just squeeze all of the frosting out and then spread it around with a spatula. The frosting was not awesome. It was very mint and that was it. When I tasted it, the flavor felt empty and then the mint flavor hit. I suspect it is a shortening or oil based frosting and this coats your tongue before the flavoring does. It’s not bad but on its own, it’s not good.

I cut the pan into 16 brownies and immediately dug in. The brownie was a really good consistency and had no more of the grittiness I had found in the batter. It was fudgey and chocolatey and made me wonder if Miss Jones has a plain brownie box mix. The frosting had enough mint that you could tell it was there but compared to a thin mint cookie, which is one of my favorites, I think it could’ve used more. I really felt like the frosting brought this brownie down, and maybe that’s my preference because I would rather have a plain brownie any day of the week. After sitting over night I found the frosting never set, it stayed soft and wet. I wish it would’ve crusted and set so it was closer to the hard chocolate coating on a thin mint cookie. I feel like this mix missed the thin mint mark and I wish they would’ve added some mint into the brownie batter. This is simply a good brownie with a minty frosting.

Without the comparison to the cookie, this brownie was good and I definitely ate more than one. But I think this box mix would’ve been a 5 without the frosting. I hate to say that the frosting brought it down a star but it really did. Have you tried this mix yet? Do you agree or feel differently?
