Don’t have a box mix handy and need an easy sweet treat? Welcome to my daily life. At the end of the day I find myself with low energy but the desire to make something for dessert that will hit the spot. Like anyone else, I turn to social media and scroll until something catches my eye. That’s how I found a Facebook reel about these chocolate sugar cookie bars from lifestyle of a foodie. They look tasty and simple, and I definitely have all the necessary ingredients.


This recipe is made up of butter, sugar, brown sugar, an egg, vanilla, salt, baking powder, cocoa powder, and flour. Pretty much the ingredients for a cookie or a brownie, nothing fancy. The preparation is just like a cookie dough, it starts with melting your butter before combining with the two sugars. Then adding in the egg and vanilla. Then finish by adding the dry ingredients.






This dough was much thicker than I expected and was so tasty, like the dough you’d rather eat than bake. The next step is to place the dough into a 8×8 square pan lined with parchment paper. Since the dough was thick I had to use my spatula to flatten it into the pan to cover the whole bottom. I was surprised at how thin of a layer it was. The final step is optional, you can top the dough with chocolate chips or granulated sugar. I went with sugar for the more authentic sugar cookie vibe.


The pan then went into the oven to bake. The recipe called for 20 minutes “or until set” and unfortunately I found mine done at 17 minutes. Remember to always check on your desserts and not to blindly trust a recipe bake time. Ovens vary.

At this point the kitchen smelled great and the bars were looking really good. I pulled the parchment paper out of the pan and cut the large square into 16 bars. I wasn’t sure what to expect from a chocolate sugar cookie bar but this far exceeded my expectations. These bars were soft and had the perfect sugar cookie consistency and the chocolate gave these bars the vibes of a brownie but dare I say, they’re better than a brownie. The sugar on top was the perfect addition providing a slight crunch. Just like a regular sugar cookie, this could be so versatile. Warmed up with a scoop of ice cream, topped with frosting, left as is. So many possibilities for these simple bars. The next time you crave something sweet and easy, I hope you make these.
