Remember how I was dying to try Lehi Mills pumpkin chocolate chip cookies? Well the stores in my area heard my plea and brought in even more Lehi Mills, now we get to dive into the pumpkin chocolate chip muffin mix! I never get tired of pumpkin so I hope you don’t either because for me, it’s always pumpkin season. It doesn’t end in fall.

This is a standard muffin mix so it only needs water, oil, and two eggs. Mix that all together and your batter is done. In this case the batter tasted so much like pumpkin bread so I’m hoping this comes out similar in taste and moisture to pumpkin bread. The best part of pumpkin desserts is how moist they all are.

Using a 3 tablespoon sized scoop, I scooped the batter into cupcake papers. The serving size on this box suggests this mix makes 12 muffins but I was able to get 17.

These muffins went into the oven to bake at 375°. It calls for 18-22 minutes and I started checking on them at 15 minutes because I never trust box mix bake times. However, at 18 minutes these were baked so Lehi Mills has impressed me by providing an accurate bake time.

I feel like these muffins came out pretty light tan and not like the orange I expect from pumpkin. But the flavor was there. These muffins had the right amount of spice to compliment the pumpkin and the chocolate chips were just the cherry on top. These muffins were really moist and just overall amazing. I’d definitely buy these again and if they finally make it to stores near you, I recommend giving them a try.
